Ingredients
  

2 medium zucchinis

3 cloves garlic, minced

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Grate the zucchinis using a box grater and place them in a clean kitchen towel. Squeeze out excess moisture.

      In a large mixing bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Mix well until the mixture is combined.

        Scoop about a tablespoon of the mixture and form it into small patties. Place them on the prepared baking sheet.

          Drizzle the patties lightly with olive oil for extra flavor and crispiness.

            Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through if desired.

              Serve warm as a delicious appetizer or snack!
