Ingredients
  

1 ½ cups graham cracker crumbs

1/2 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh watermelon puree (seedless)

1 tablespoon gelatin powder

3 tablespoons cold water

Fresh watermelon slices and mint leaves for garnish

Instructions
 

Prepare the Crust: In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form a crust. Refrigerate for 10 minutes.

    Make the Filling: In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until blended.

        Add Watermelon: In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes. Gently heat until dissolved. Mix the watermelon puree into the cream cheese mixture, then add the gelatin, stirring well.

          Combine Layers: Pour the watermelon cheesecake filling over the prepared crust. Smooth out the top and refrigerate for at least 4 hours, or until set.

            Serve: Once set, remove from springform pan. Garnish with fresh watermelon slices and mint leaves before slicing and serving.
