1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 ½ cups watermelon puree (seedless watermelon blended)

1 cup whipped cream (plus extra for topping)

2 tablespoons gelatin (dissolved in ¼ cup water)

2-3 tablespoons lemon juice

Fresh watermelon slices for garnish

Mint leaves for garnish

Instructions
 

Prepare the Crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a springform pan to create an even crust. Refrigerate while preparing the filling.

    Make the Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well blended.

      Watermelon Puree: In a separate bowl, combine the watermelon puree with the dissolved gelatin and lemon juice. Stir well until fully mixed.

        Combine everything: Gently fold the watermelon mixture into the cream cheese mixture. Finally, fold in the whipped cream to add lightness to the filling.

          Assemble the Cheesecake: Pour the watermelon cheesecake filling over the prepared crust, smoothing the top with a spatula. Refrigerate for at least 4-6 hours or until set.
