1 lb ground beef

2 cups cooked rice (white or brown)

1 cup bell peppers (diced)

1 cup corn (canned or frozen)

1 cup black beans (rinsed and drained)

1 cup salsa

1 avocado (sliced)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Optional toppings: sour cream, jalapeños, hot sauce

Instructions
 

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes.

    Season the beef with salt, pepper, and any preferred spices.

      Add the diced bell peppers and sauté until tender, about 3-4 minutes.

        Stir in the corn and black beans. Cook until heated through.

          Mix in the salsa and let it simmer for an additional 2-3 minutes.

            In serving bowls, layer the cooked rice, followed by the beef mixture.

              Top with sliced avocado, shredded cheese, and fresh cilantro.

                Serve with lime wedges and additional toppings as desired.
