1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup granulated sugar

3 (8 oz) packages cream cheese, softened

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh strawberries, pureed

½ cup sugar for strawberry sauce

Fresh strawberries for garnish

Instructions
 

Prepare the Crust: Preheat your oven to 325°F (165°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.

    Make the Cheesecake Filling: In a large bowl, beat together the cream cheese and granulated sugar until smooth. Add vanilla extract and eggs, one at a time, mixing well after each addition. Stir in sour cream and pureed strawberries until fully incorporated.

      Bake: Pour the cheesecake filling over the crust in the springform pan. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for an hour.

        Prepare Strawberry Sauce: In a saucepan, heat ½ cup sugar and fresh strawberries over medium heat. Cook until the strawberries break down and the mixture thickens slightly (about 10 minutes). Let cool.

          Chill and Serve: Remove the cheesecake from the oven, let it cool to room temperature, and refrigerate for at least 4 hours or overnight. Serve topped with strawberry sauce and fresh strawberries.
