4 large bell peppers (any color)

1 cup cooked quinoa

1 can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops of the bell peppers and remove the seeds and membranes.

      Cook the Filling: In a skillet, sauté the chopped onion and garlic until translucent. Add the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Stir until heated through.

        Stuff the Peppers: Fill each bell pepper with the veggie mixture, packing it in tightly. If you like, sprinkle cheese on top.

          Bake: Place stuffed peppers upright in a baking dish. Bake for 25-30 minutes until peppers are tender.

            Garnish: Remove from the oven, let cool slightly, garnish with fresh cilantro, and serve!
