1 sheet of vegan puff pastry

1 cup fresh strawberries, sliced

1/4 cup maple syrup

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

1/4 cup coconut cream

1 tablespoon cornstarch

1 tablespoon powdered sugar (for dusting)

Instructions
 

Preheat your oven to 400°F (200°C).

    Roll out the vegan puff pastry on a lightly floured surface and cut into 4 rectangles.

      In a bowl, combine sliced strawberries, maple syrup, lemon juice, and vanilla extract. Let it sit for 10 minutes.

        In another bowl, whip the coconut cream with cornstarch until it thickens.

          Place a spoonful of the coconut cream in the center of each puff pastry rectangle.

            Top with the strawberry mixture, spreading it evenly over the cream.

              Fold the edges of the pastry to create a pocket around the filling.

                Bake for 15-20 minutes until golden brown.

                  Let cool slightly and dust with powdered sugar before serving.
