Ingredients
  

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup milk

2 large eggs

2 tablespoons unsalted butter (melted)

1 tablespoon vanilla extract

Vegetable oil (for frying)

Powdered sugar (for dusting)

Instructions
 

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

    In a separate bowl, combine the milk, eggs, melted butter, and vanilla extract. Mix until well incorporated.

      Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms.

        Lightly flour a clean surface and turn the dough out. Roll the dough to about 1/4 inch thickness.

          Cut the dough into squares or rectangles (about 2x2 inches).

            In a deep frying pan, heat vegetable oil to 350°F (175°C).

              Carefully place a few beignet pieces in the hot oil and fry until golden brown on both sides, about 2-3 minutes.

                Remove the beignets and place on paper towels to drain excess oil.

                  Dust generously with powdered sugar before serving.
