1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

3/4 cup granulated sugar

1 teaspoon vanilla bean paste

2 large eggs

1/2 cup sour cream

1/4 cup heavy cream

1/4 cup sugar for topping

Fresh berries for garnish (optional)

Prepare the Crust: Preheat your oven to 325°F (162°C). In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of cupcake liners in a muffin tin.

    Make the Batter: In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add in the vanilla bean paste, followed by the eggs one at a time, mixing well after each addition. Stir in sour cream and heavy cream until combined.

      Fill the Cups: Spoon the cheesecake batter over the crust in each cupcake liner, filling them about 3/4 full.

        Bake: Place the muffin tin in the oven and bake for 18-20 minutes or until the edges are set but the center is still slightly wobbly.

          Cool Down: Allow the cupcakes to cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely. Refrigerate for at least 4 hours or overnight for the best texture.
