Ingredients
  

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 cup spinach leaves, roughly chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/4 cup freshly grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Orzo: In a large pot, bring water to a boil. Add a pinch of salt and the orzo. Cook according to package instructions (typically 8-10 minutes) until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Bell Pepper and Zucchini: Stir in the diced red bell pepper and zucchini. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.

        Incorporate the Tomatoes and Spinach: Add the cherry tomatoes, spinach, dried oregano, and red pepper flakes (if using). Season with salt and pepper. Cook for about 3-4 minutes until the tomatoes start to soften and the spinach wilts.

          Combine with Orzo: Add the cooked orzo to the skillet with the sautéed vegetables. Toss everything together until well mixed. Stir in the freshly grated Parmesan cheese and allow it to melt into the dish.
