Ingredients
  

4 salmon fillets

3 cups fresh spinach

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Prep the Ingredients: Rinse the salmon fillets and pat them dry with paper towels. Prepare the spinach and tomatoes.

    Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

      Cook the Salmon: Season the salmon fillets with salt, pepper, and Italian seasoning. Place them skin-side down in the skillet and cook for 3-4 minutes on each side, or until cooked through. Remove and set aside.

        Make the Sauce: In the same skillet, add the cherry tomatoes and spinach. Cook until the spinach is wilted, then pour in the heavy cream and add the Parmesan cheese. Stir until the sauce is combined and thickened slightly.

          Combine: Add the cooked salmon back into the skillet, spooning the sauce over the top.

            Serve: Garnish with fresh basil, if desired, and serve warm.
