Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

1 bay leaf

2 cups fresh kale, chopped

Salt and pepper to taste

Olive oil for sautéing

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add minced garlic and cook for another 1-2 minutes until fragrant.

      Stir in the chickpeas, diced tomatoes (with juice), vegetable broth, thyme, basil, and bay leaf. Bring to a boil.

        Reduce heat and let it simmer for 20-25 minutes, allowing flavors to meld.

          Add the chopped kale and season with salt and pepper. Simmer for an additional 5 minutes until the kale is tender.

            Remove the bay leaf and serve warm, garnished with a drizzle of olive oil if desired.
