Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup cornstarch

1 cup buttermilk

1 cup panko breadcrumbs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/4 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil for frying

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (optional)

Chopped green onions and sesame seeds for garnish

Instructions

Prepare the Shrimp: In a bowl, soak the shrimp in buttermilk for about 15-20 minutes.

Coat the Shrimp: In a shallow dish, mix cornstarch with garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper. Dredge each shrimp in the cornstarch mixture, then dip back into the buttermilk and finally coat with panko breadcrumbs.

Heat the Oil: In a deep skillet, heat about 2 inches of vegetable oil over medium-high heat until hot (around 350°F).

Fry the Shrimp: Carefully add shrimp in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Make the Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and Sriracha. Adjust spiciness according to taste.

Serve: Place the crispy shrimp on a platter, drizzle with the sauce, and garnish with chopped green onions and sesame seeds. Enjoy your trendy Firecracker Shrimp!
