2 boneless, skinless chicken breasts

4 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 cup frozen peas

1 cup uncooked egg noodles

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon paprika

½ teaspoon black pepper

1 teaspoon salt (or to taste)

2 tablespoons olive oil

1 tablespoon butter

2 tablespoons fresh lemon juice

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery, sautéing until the vegetables are tender (about 5-7 minutes). Stir in the minced garlic and sauté for another minute until fragrant.

    Cook the Chicken: Season the chicken breasts with salt, paprika, pepper, thyme, and oregano. Move the sautéed vegetables to one side of the pot and add the chicken breasts. Sear for about 4-5 minutes per side, until golden brown.

      Add Broth: Pour in the chicken broth and bring to a gentle simmer. Cover and cook for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

        Remove and Shred Chicken: Carefully remove the chicken breasts from the pot. Allow them to cool slightly, then shred them using two forks.

          Combine Ingredients: Add the uncooked egg noodles and frozen peas to the pot. Return the shredded chicken to the pot and stir everything together. Cook for an additional 8-10 minutes, or until the noodles are tender.

            Finish the Soup: Stir in the fresh lemon juice for a bright flavor. Adjust seasoning with additional salt and pepper if necessary.
