Ingredients
  

1 lb ground beef

1 cup chopped onions

2 cloves garlic, minced

1 cup bell peppers, diced

1 can (15 oz) diced tomatoes

1 cup cooked rice

1 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Optional: fresh herbs for garnish

Instructions
 

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until soft.

    Add ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon.

      Stir in bell peppers, cumin, salt, and pepper. Cook for an additional 5 minutes.

        Mix in diced tomatoes and cooked rice. Stir well and cook until the mixture is heated through.

          Remove from heat, sprinkle cheese on top, and cover until cheese melts.

            Serve hot, garnished with fresh herbs if desired.
