Ingredients
  

2 cups grated zucchini

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

1 teaspoon vanilla extract

3 large eggs

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

    In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, vanilla extract, and eggs until well combined.

      In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

        Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

          Fold in the chopped nuts and/or chocolate chips if desired.

            Pour the batter into the prepared loaf pan and smooth the top.

              Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

                Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
