1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, chopped

2 celery stalks, chopped

4 cups chicken broth

1 can (14 oz) diced tomatoes

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 package (9 oz) cheese tortellini

2 cups fresh spinach

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned, about 5-7 minutes. Remove any excess grease if necessary.

    Add the diced onion, garlic, carrots, and celery to the pot. Sauté for 5-6 minutes, or until the vegetables are tender and the onions are translucent.

      Pour in the chicken broth and diced tomatoes (with their juices). Stir in the Italian seasoning and red pepper flakes (if using). Bring the mixture to a simmer.

        Add the cheese tortellini to the pot and cook according to package directions (usually about 3-5 minutes) until the tortellini are tender and float to the top.

          Stir in the fresh spinach, letting it wilt into the soup for about a minute. Season with salt and pepper to taste.

            Serve the soup hot, topped with grated Parmesan cheese and fresh basil leaves if desired.
