Ingredients
  

200g rice noodles

300g shrimp, peeled and deveined

4 cups chicken or vegetable broth

1 can coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon lime juice

2 garlic cloves, minced

1 tablespoon ginger, grated

1 cup bean sprouts

1 red bell pepper, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Soak the rice noodles in hot water for about 20 minutes or until soft, then drain.

    In a large pot, heat a bit of oil over medium heat and sauté the garlic and ginger until fragrant.

      Add the red curry paste and cook for another 2 minutes, stirring continuously.

        Pour in the chicken or vegetable broth and bring to a simmer.

          Add the coconut milk, fish sauce, and lime juice; stir well.

            Toss in the shrimp and sliced bell pepper, cooking for about 5 minutes or until the shrimp turn pink.

              Add the soaked noodles and bean sprouts to the pot; stir gently to combine and heat through.

                Serve hot, garnished with fresh cilantro and lime wedges on the side.
