Ingredients
  

2 cups rhubarb, diced

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 cup all-purpose flour

½ cup rolled oats

½ cup unsalted butter, softened

½ teaspoon baking powder

¼ teaspoon salt

Instructions
 

Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.

    In a bowl, mix the diced rhubarb, ½ cup sugar, cornstarch, and vanilla extract. Set aside.

      In another bowl, combine flour, oats, remaining sugar, baking powder, and salt.

        Cut in the softened butter until the mixture resembles coarse crumbs.

          Press half of the crumb mixture into the bottom of the prepared baking dish.

            Spread the rhubarb mixture evenly over the crust.

              Sprinkle the remaining crumble mixture on top of the rhubarb.

                Bake for 35-40 minutes or until golden brown.

                  Allow to cool before cutting into bars.
