Ingredients
  

8 oz (225g) noodles (your choice)

2 tbsp vegetable oil

4 cloves garlic, minced

2 tbsp chili oil

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp Szechuan peppercorns, toasted

1 tbsp sugar

1/2 tsp salt

1/2 cup scallions, chopped

1/4 cup cilantro, chopped

Sesame seeds for garnish

Instructions
 

Cook the noodles according to package instructions. Drain and set aside.

    In a skillet over medium heat, heat the vegetable oil. Add the minced garlic and sauté until fragrant, about 30 seconds.

      Stir in chili oil, soy sauce, rice vinegar, toasted Szechuan peppercorns, sugar, and salt. Cook for another 1-2 minutes until combined.

        Toss the cooked noodles in the garlic chili oil mixture until well coated.

          Remove from heat and stir in chopped scallions and cilantro.

            Serve hot, garnished with sesame seeds and extra scallions if desired.
