Ingredients
  

2 ripe mangoes, julienned

1 red bell pepper, sliced

1 carrot, shredded

1 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup roasted peanuts, roughly chopped

2 tablespoons fish sauce

1 tablespoon lime juice

1 tablespoon honey

1 teaspoon chili flakes (adjust for spice preference)

Salt to taste

Instructions
 

In a large mixing bowl, combine the julienned mangoes, sliced bell pepper, shredded carrot, cucumber, and red onion.

    In a separate bowl, whisk together the fish sauce, lime juice, honey, chili flakes, and salt to create the dressing.

      Pour the dressing over the salad mixture and toss gently to combine all ingredients well.
