Ingredients
  

2 cups mashed sweet potatoes (cooked and cooled)

1/2 cup milk (warm)

1/4 cup unsalted butter (melted)

1/4 cup brown sugar

1 packet (2 1/4 teaspoons) active dry yeast

1 large egg

5 to 6 cups all-purpose flour

1 teaspoon salt

1/2 teaspoon ground cinnamon

Optional: melted butter for brushing

Instructions
 

In a mixing bowl, combine the warm milk, yeast, and brown sugar. Let it sit for about 5 minutes until frothy.

    In another large bowl, mix together the mashed sweet potatoes, melted butter, egg, and salt. Stir in the yeast mixture.

      Gradually add in the flour, one cup at a time, mixing until a soft dough forms.

        Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

          Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in the refrigerator overnight (or for at least 8 hours).

            The next day, remove the dough from the fridge and let it sit at room temperature for about 30 minutes.

              Divide the dough into equal portions and shape them into rolls. Place each roll into a greased baking dish.

                Cover with a clean towel and let them rise in a warm place for about 1-2 hours, or until doubled in size.

                  Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown.

                    If desired, brush the warm rolls with melted butter before serving.
