Ingredients
  

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup granulated sugar

1 cup packed brown sugar

1 cup vegetable oil

4 large eggs

2 cups mashed sweet potatoes (cooked and cooled)

1 teaspoon vanilla extract

1 cup chopped walnuts (optional)

½ cup raisins (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour your bundt cake pan.

    In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

      In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until combined.

        Add eggs one at a time, beating well after each addition. Mix in the mashed sweet potatoes and vanilla extract until smooth.

          Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in walnuts and raisins at this stage.

            Pour the batter into the prepared bundt pan, smoothing the top with a spatula.

              Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

                Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a wire rack to cool completely.

                  Decorate with your favorite icing or glaze before serving, if desired.
