Ingredients
  

1 lb chicken breasts, diced

1 cup jasmine rice

1 cup sweet chili sauce

1 bell pepper, thinly sliced (red or yellow)

1 cup broccoli florets

2 green onions, chopped

2 tablespoons vegetable oil

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

In a pot, cook the jasmine rice according to package instructions. Set aside once finished.

    In a large skillet, heat vegetable oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.

      Add the sliced bell pepper and broccoli florets to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender.

        Pour the sweet chili sauce over the chicken and vegetables, stirring to coat evenly. Allow to simmer for about 2-3 minutes.

          Serve the chicken and vegetable mixture over a bed of jasmine rice.

            Garnish with chopped green onions and sesame seeds before serving.
