2 cups rhubarb, chopped

1 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup rolled oats

1 cup all-purpose flour

1/2 cup shredded coconut

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine chopped rhubarb, granulated sugar, vanilla extract, and lemon juice. Stir until the rhubarb is well-coated.

      In another bowl, mix rolled oats, flour, shredded coconut, baking powder, and salt.

        Add melted butter and brown sugar to the oat mixture and blend well until crumbly.

          Layer the rhubarb mixture in a greased baking dish and top with the oatmeal crumble.

            Bake for 30-35 minutes or until the top is golden brown and the rhubarb is bubbling.
