1 lb chicken breast, diced

1 cup pineapple chunks (fresh or canned)

1 cup jasmine rice

2 cups chicken broth

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon ginger, grated

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and fluffy. Remove from heat and let it sit covered for an additional 5 minutes.

    Sauté the Chicken: In a large skillet or wok, heat the olive oil over medium-high heat. Add the diced chicken breast, season with salt and pepper, and cook until golden brown and cooked through (about 7-10 minutes). Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent. Then, add the diced red and green bell peppers, cooking for another 3-4 minutes until they are tender.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the pineapple chunks, soy sauce, honey, and grated ginger. Stir well to combine and let cook for an additional 3-5 minutes so the flavors meld together.

          Serve: Fluff the cooked rice with a fork and divide it among serving plates. Top the rice with the sweet and savory pineapple chicken mixture. Garnish with fresh cilantro or sliced green onions if desired.
