Sun-Dried Tomato Grilled Cheese

Ingredients
  

2 slices of your favorite bread

1 cup shredded mozzarella cheese

1/4 cup sun-dried tomatoes, chopped

2 tablespoons fresh basil, chopped

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

Heat the olive oil in a skillet over medium heat.

    Add the sun-dried tomatoes and chopped basil; sauté for 2-3 minutes.

      Season with salt and pepper. Remove from heat and set aside.

        Preheat another skillet over medium heat.

          Place one slice of bread in the skillet, layer with mozzarella cheese, sun-dried tomato mixture, and top with another mozzarella layer.

            Cover with the second slice of bread and cook for 3-4 minutes until golden brown.

              Carefully flip the sandwich and grill the other side until the cheese is melted and bread is crispy.

                Remove from skillet, slice, and enjoy!
