Ingredients
  

2 lbs boneless chicken breasts

1 cup cherry tomatoes

1 medium cucumber

1 red bell pepper

1 yellow bell pepper

½ cup red onion

3 cloves garlic

¼ cup olive oil

2 tbsp balsamic vinegar

1 tsp dried basil

1 tsp salt

½ tsp black pepper

Fresh basil leaves for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, balsamic vinegar, minced garlic, dried basil, salt, and black pepper. Add chicken breasts and marinate for at least 30 minutes.

    Prep the Veggies: While the chicken is marinating, chop the cherry tomatoes, cucumber, red and yellow bell peppers, and red onion into bite-sized pieces.

      Grill the Chicken: Preheat a grill or grill pan over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side, or until fully cooked through.

        Assemble the Salad: In a large bowl, combine the chopped vegetables. Slice the grilled chicken and add it on top of the veggies.

          Serve: Drizzle with extra olive oil and balsamic vinegar if desired, and garnish with fresh basil leaves.
