Juice of 1 lime

Salt to taste

1 pint cherry tomatoes

8 oz fresh mozzarella balls

Fresh basil leaves

Balsamic reduction (for drizzling)

Salt and pepper to taste

Skewers

1 lb shrimp (peeled and deveined)

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Corn tortillas

Toppings: avocado, cabbage, lime wedges

Instructions
 

In a bowl, mix olive oil, lemon juice, zest, minced garlic, thyme, salt, and pepper.

    Marinate the chicken breasts in the mixture for at least 1 hour.

      Preheat the grill to medium-high heat.

        Grill chicken for 6-7 minutes per side or until fully cooked.
