2 tablespoons red curry paste

1 onion (chopped)

2 cups spinach

Salt to taste

4 cups mixed greens

1 cup cherry tomatoes (halved)

1/2 cup corn (cooked)

1/3 cup BBQ sauce

Optional: Avocado slices

Instructions
 

In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.

    Add chicken breasts and marinate for at least 30 minutes.

      Preheat the grill over medium heat.

        Grill the chicken for 6-7 minutes on each side or until fully cooked.
