Ingredients
  

1 package of refrigerated sugar cookie dough

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

1 teaspoon lemon juice

Sprinkles for decoration (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    Press sugar cookie dough evenly into the bottom of a greased 9-inch springform pan to form the cookie crust.

      In a mixing bowl, beat the softened cream cheese and sugar until smooth.

        Add vanilla extract, eggs, sour cream, and lemon juice to the cream cheese mixture; mix until well combined.

          Pour the cheesecake filling over the cookie crust in the springform pan.

            Bake for about 40-45 minutes or until the center is set but slightly jiggly.

              Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

                Refrigerate for at least 4 hours or overnight before serving.

                  Before serving, garnish with sprinkles if desired.
