Ingredients
  

1 medium spaghetti squash

2 cups broccoli florets

1 pound spicy Italian sausage (casings removed)

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Olive oil (for drizzling)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil, and sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes, until fork-tender.

      In a skillet, brown the spicy Italian sausage over medium heat, breaking it apart as it cooks. Add the broccoli florets and continue cooking until the broccoli is tender and the sausage is cooked through.

        Stir in the marinara sauce and garlic powder, allowing the mixture to simmer for a few minutes. Remove from heat.

          Once the squash is cool enough to handle, use a fork to shred the flesh into spaghetti-like strands. Combine the squash strands with the sausage and broccoli mixture, mixing well.

            Stuff the squash halves with the sausage-broccoli mixture, and top each half with mozzarella and Parmesan cheese.

              Return to the oven and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

                Garnish with fresh basil leaves before serving.
