Stuffed Mexican Chicken Breast Delight Recipe

Ingredients
  

2 large boneless, skinless chicken breasts

1 cup shredded Mexican cheese blend

1/2 cup black beans, drained and rinsed

1/2 cup corn, canned or frozen

1/4 cup diced red bell pepper

1/4 cup diced onion

1 tablespoon taco seasoning

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the shredded cheese, black beans, corn, red bell pepper, onion, and taco seasoning. Mix well to create the stuffing.

      Carefully slice a pocket into the side of each chicken breast. Be sure not to cut all the way through.

        Stuff each chicken breast with the filling mixture, using toothpicks to secure the opening if necessary.

          Season the outside of the chicken breasts with salt, pepper, and a drizzle of olive oil.

            Heat a skillet over medium-high heat and sear the chicken breasts for about 3-4 minutes on each side, until golden brown.

              Transfer the stuffed chicken breasts to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.

                Remove from the oven and let rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
