Ingredients
  

2 cups cooked white or brown rice

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper, to taste

1 cup corn kernels (fresh or frozen)

1/2 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/4 cup red onion, finely chopped

Juice of 1 lime

Hot sauce, to taste (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Let it marinate for at least 15 minutes.

    Cook the Corn: In a skillet over medium heat, add the corn kernels and sauté for about 5 minutes until they are lightly charred. Season with a pinch of salt and set aside.

      Cook the Chicken: In the same skillet, add a little more olive oil if needed. Cook the marinated chicken over medium-high heat for about 7-10 minutes, or until golden brown and cooked through.

        Assemble the Bowls: In a large serving bowl, start with a base of cooked rice. Top with the cooked chicken, charred corn, diced avocado, crumbled cotija cheese, red onion, and fresh cilantro.
