Ingredients
  

1 cup cooked rice

1 cup grilled chicken, diced

1 cup corn (fresh or canned)

1/2 cup red bell pepper, diced

1/2 cup black beans, drained and rinsed

1/4 cup green onions, sliced

1/4 cup cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

1/2 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Optional: Cotija cheese for topping

Instructions
 

In a pan, combine corn, red bell pepper, black beans, chili powder, cumin, salt, and pepper. Sauté until heated through.

    In a bowl, layer the cooked rice as the base.

      Add the diced grilled chicken on top of the rice.

        Spoon the sautéed corn and vegetable mixture over the chicken.

          Add sliced avocado and sprinkle green onions and cilantro on top.

            Serve with lime wedges on the side and sprinkle optional Cotija cheese if desired.
