2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar (divided)

2 cups heavy cream

1 cup whole milk

1 tablespoon pure vanilla bean paste

1 teaspoon lemon juice

A pinch of salt

Instructions

In a medium bowl, combine sliced strawberries with ½ cup of sugar and lemon juice; mix well and let sit for about 30 minutes until strawberries release their juices.

In a separate bowl, whisk together the heavy cream, whole milk, remaining sugar, vanilla bean paste, and salt until fully combined.

Blend the strawberry mixture with the cream mixture in a blender until smooth (or leave some strawberry chunks for texture if preferred).

Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the soft ice cream into an airtight container and freeze for at least 4 hours or until firm.
