1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 ½ cups fresh strawberries, pureed

2 tablespoons cornstarch

¼ cup strawberry preserves (for swirls)

Instructions
 

Prepare the Crust: In a medium bowl, mix graham cracker crumbs with sugar and melted butter. Press this mixture into the bottom of a 9-inch springform pan to create an even crust. Bake at 350°F (175°C) for 10 minutes. Let it cool.

    Mix the Cream Cheese Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add in sugar and vanilla extract, mixing well.

      Add Eggs: Add each egg one at a time, mixing just until combined after each addition. Be careful not to overmix.

        Incorporate Sour Cream: Gently fold in sour cream until the mixture is creamy and smooth.

          Prepare Strawberry Puree: In a separate bowl, mix the strawberry puree with cornstarch. This will help thicken the puree and stabilize it in the cheesecake.

            Layering: Pour half of the cream cheese mixture into the prepared crust. Spoon half of the strawberry puree on top. Use a toothpick or knife to swirl it gently into the batter. Repeat with the remaining cream cheese mixture and strawberry puree.

              Bake: Bake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

                Chill: Remove from the oven, let it cool at room temperature, then refrigerate for at least 4 hours, preferably overnight.

                  Serve: Once chilled, top with strawberry preserves and sliced strawberries before serving.
