1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 cup fresh strawberries, puréed

¼ cup confectioners' sugar

Instructions
 

Preheat the oven to 325°F (160°C).

    In a bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter; mix well.

      Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.

        In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar until smooth and creamy.

          Add the vanilla extract and beat in eggs one at a time, mixing well after each addition.

            Stir in sour cream until fully incorporated.

              Pour half of the cream cheese mixture over the prepared crust.

                Mix the strawberry purée with the confectioners' sugar, then swirl into the cream cheese mixture.

                  Pour the remaining cream cheese mixture on top and add additional strawberry swirls if desired.

                    Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

                      Allow to cool at room temperature, then chill in the refrigerator for at least 4 hours before serving.
