For the Cake:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 tsp baking powder

½ tsp vanilla extract

½ cup milk

A pinch of salt

For the Strawberry Layer:

2 cups fresh strawberries, hulled and sliced

3 tbsp granulated sugar

1 tbsp lemon juice

For the Whipped Cream:

2 cups heavy whipping cream

¼ cup powdered sugar

1 tsp vanilla extract

For Garnish:

Fresh mint leaves

Additional sliced strawberries

Instructions
 

Make the Cake:

    - Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan.

      - In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with the milk until just combined.

            - Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

              - Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

                Prepare the Strawberries:

                  - In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat and allow to sit for about 15 minutes to release their juices.

                    Whip the Cream:

                      - In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.

                        - Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overwhip.

                          Assemble the Trifle:

                            - Cut the cooled cake into small cubes.

                              - In a large trifle dish or individual glasses, layer the ingredients as follows:

                                - Start with a layer of cake cubes.

                                  - Add a layer of the macerated strawberries along with some of their juices.

                                    - Top with a generous layer of whipped cream.

                                      - Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.

                                        Garnish:

                                          - Decorate the top with fresh mint leaves and additional sliced strawberries as desired.

                                            Chill and Serve:

                                              - Refrigerate the trifle for at least 2 hours before serving to allow the flavors to meld together.
