Ingredients

2 1/2 cups all-purpose flour

2 1/2 tsp baking powder

1/2 tsp salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

2 tsp vanilla extract

1 cup whole milk

2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1/4 cup powdered sugar

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

Prepare the Batter: In a bowl, whisk together flour, baking powder, and salt. In a separate large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.

Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour. Mix until just combined.

Bake the Cakes: Divide the batter evenly among the three prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Prepare the Whipped Cream: In a chilled bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving platter. Spread a layer of whipped cream and top with sliced strawberries. Repeat with the second cake layer. Place the final layer on top and frost the top and sides of the cake with the remaining whipped cream.

Decorate: Garnish the top with additional strawberries and serve chilled. Enjoy your delicious Strawberry Shortcake Layer Cake!
