Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8-ounce) packages cream cheese, softened

¾ cup sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

1 cup fresh strawberries, sliced

¼ cup strawberry syrup (optional for drizzling)

Instructions
 

Preheat the oven to 325°F (163°C).

    In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well and press into the bottom of a springform pan to form a crust.

      In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add vanilla, and mix well.

        Gradually add the eggs, one at a time, mixing until fully combined.

          Stir in sour cream. Pour the cheesecake mixture over the crust in the springform pan.

            Bake for 50-60 minutes or until the center is set. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

              Before serving, top with fresh strawberries and drizzle with strawberry syrup if desired.
