Ingredients

2 cups fresh strawberries, hulled and sliced

2 cups rhubarb, chopped

1 cup granulated sugar

1/4 cup all-purpose flour

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon salt

1 tablespoon butter

1 prepared pie crust (store-bought or homemade)

Instructions

Preheat your oven to 425°F (220°C).

In a large mixing bowl, combine the sliced strawberries and chopped rhubarb.

Sprinkle the granulated sugar, flour, lemon juice, vanilla extract, and salt over the fruit mixture. Stir gently until everything is well coated.

Let the fruit mixture sit for about 10 minutes to macerate and release juices.

Pour the fruit mixture into the prepared pie crust. Dot the top with small pieces of butter.

If using a top crust, place it over the filled pie and cut slits for steam to escape. Crimp the edges to seal.

Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Allow the pie to cool for at least 2 hours before slicing to let the filling set properly.
