2 cups sliced strawberries

2 cups sliced rhubarb

1 cup granulated sugar

1/4 cup all-purpose flour

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 pie crust (store-bought or homemade)

1 egg (for egg wash)

1 tablespoon butter (to dot)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced strawberries, rhubarb, sugar, flour, lemon juice, vanilla extract, and cinnamon. Mix gently until the fruit is coated.

      Roll out the pie crust and fit it into a 9-in pie pan.

        Pour the fruit mixture into the crust and dot with butter.

          Roll out another pie crust for the top and cut slits for ventilation or create a lattice top.

            Place the top crust over the pie and seal the edges. Brush the top with egg wash.

              Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the pie is bubbly and golden.

                Allow the pie to cool before slicing and enjoying!
