Ingredients
  

2 cups fresh strawberries, hulled and chopped

2 cups rhubarb, diced

1 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ cup old-fashioned rolled oats

½ cup brown sugar

½ teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1 large egg

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.

    In a medium saucepan, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat until the mixture starts to thicken and bubble. Set aside to cool.

      In a large mixing bowl, combine flour, oats, brown sugar, baking powder, and salt. Mix well.

        Add the softened butter and egg to the flour mixture. Use your fingers or a fork to blend until crumbly.

          Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.

            Spread the strawberry-rhubarb filling over the crust. Crumble the remaining mixture on top.

              Bake for 40-45 minutes, until the top is golden brown. Allow to cool before cutting into bars.
