Ingredients

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

1 cup fresh strawberries, finely chopped

1 cup white chocolate chips

1 tablespoon coconut oil

Extra graham cracker crumbs for rolling

Instructions

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

Gently fold in the crushed graham crackers and finely chopped strawberries until fully incorporated.

Refrigerate the mixture for about 30 minutes to make it easier to handle.

Once chilled, use a small cookie scoop or your hands to shape the mixture into bite-sized balls.

Place the truffle balls on a parchment-lined baking sheet and freeze for about 15 minutes.

In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second increments, stirring until smooth.

Remove the truffles from the freezer and dip each ball into the melted white chocolate, ensuring they're fully coated.

Roll the chocolate-covered truffles in graham cracker crumbs for an extra touch.

Refrigerate the truffles again until the chocolate is set, about 30 minutes.
