8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup crushed graham crackers

1 cup strawberries, finely chopped

1 cup white chocolate chips

1 tbsp coconut oil

Optional: sprinkles for decoration

In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

    Gently fold in the crushed graham crackers and chopped strawberries until evenly mixed.

      Scoop out small portions of the mixture and roll them into balls. Place them on a baking sheet lined with parchment paper.

        Freeze the truffle balls for about 30 minutes to firm up.

          While the truffles are chilling, melt the white chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.

            Dip each chilled truffle ball into the melted white chocolate, coating them completely. Return to the parchment-lined baking sheet.

              If desired, sprinkle with additional crushed graham crackers or colorful sprinkles before the chocolate sets.

                Refrigerate the truffle balls for at least 15 minutes to set the chocolate.
