1 ½ cups all-purpose flour

1 cup granulated sugar

1 ½ tsp baking powder

½ tsp salt

½ cup unsalted butter, softened

2 large eggs

1 tsp pure vanilla extract

½ cup champagne (or sparkling wine)

½ cup fresh strawberries, pureed

For the Strawberry Champagne Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

¼ cup champagne

1 tsp pure vanilla extract

½ cup fresh strawberries, diced (for garnish)

Optional:

Edible glitter or sprinkles for decoration

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a standard cupcake tin with cupcake liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.

      Cream Butter and Eggs: In another bowl, beat the softened butter until creamy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Combine Mixtures: Alternate adding the dry ingredients and champagne to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined. Gently fold in the strawberry puree.

          Fill Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

              Prepare the Frosting: In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, mixing well. Pour in the champagne and vanilla extract, beating until combined and fluffy.
