Ingredients
  

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

4 large eggs

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon

1/4 cup fresh lemon juice

Instructions
 

Preheat your oven to 400°F (200°C).

    In a saucepan, combine the water and butter over medium heat; bring to a boil.

      Stir in the flour and salt until the mixture pulls away from the sides of the pan and forms a ball.

        Remove from heat and let cool slightly.

          Add eggs one at a time, mixing well after each addition until smooth.

            Drop tablespoons of dough onto a baking sheet lined with parchment paper.

              Bake for 20-25 minutes until golden brown and puffed.

                Allow to cool completely before filling.

                  In a mixing bowl, whip the heavy cream, powdered sugar, vanilla extract, lemon zest, and lemon juice until soft peaks form.

                    Cut the tops off of the cooled puffs, fill them with the lemon cream mixture, and replace the tops.

                      Dust with powdered sugar before serving.
