20 jumbo pasta shells

1 cup ricotta cheese

1 cup cooked spinach, chopped (fresh or frozen)

1 cup canned artichoke hearts, drained and chopped

1 cup mozzarella cheese, shredded (divided)

1/2 cup Parmesan cheese, grated

1/2 cup cream cheese, softened

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnishing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, cooked spinach, chopped artichoke hearts, 1/2 cup of mozzarella cheese, Parmesan cheese, cream cheese, garlic powder, onion powder, red pepper flakes (if using), salt, and pepper. Mix until well combined.

        Stuff the Shells: Take each cooked shell and fill it generously with the spinach and artichoke mixture. Place the stuffed shells seam-side up in a large baking dish.

          Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well coated. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Uncover and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh basil leaves before serving. Enjoy your meal with a side salad or some garlic bread!
