Ingredients
  

8 oz rice noodles

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp chili paste (adjust to taste)

1 tbsp sesame oil

1 cup bell peppers, thinly sliced (red, yellow, and green)

2 green onions, chopped

1 tbsp fresh cilantro, for garnish

Salt and pepper to taste

Instructions
 

Cook the Noodles: Boil water in a large pot, add rice noodles, and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté until fragrant.

      Cook the Shrimp: Add shrimp to the skillet and season with salt, pepper, and chili paste. Cook until shrimp turns pink, about 3-4 minutes.

        Add Veggies: Stir in the sliced bell peppers and continue to cook for another 2-3 minutes until they are tender.

          Combine Noodles: Add cooked rice noodles to the skillet, pour in soy sauce and sesame oil, and toss everything together until well combined and heated through.

            Garnish and Serve: Remove from heat, top with chopped green onions and cilantro, and serve hot.
